I am only given a limited number of articles to show per page (# Articles to List: 5,10,15,20, etc.).

Hi. This is not the number of articles on the site page, but the number of articles on the administration page, just for convenience.

The number of articles on the site page is tuned in the settings of the category blog menu item or in Global Articles settings.

You can configure any amount.

Altering the fields you suggested changes nothing in my frontend. There are still 5 articles per pagination-page in the news-category section.

Only if I go to Main Menu/Edit News/List Layouts/# Articles to List and pick any alternative from the list does it change. =/
